Opening our Hearts ♥

Christmas is in many ways all about opening up… presents, homes, welcomes, cards, invitations, boxes of decorations, etc.

Above all, it is about opening our hearts. For however beautifully wrapped something is, the most precious gift of all is found inside our hearts, it is love, without question.

I have some little Love Cookies for the sweet toothed out there, these nutty, light and healthy treats are a great alternative to the traditional mince pies. Though I can’t resist those nutty nibbles either! Best of all they’re good for the body and taste ridiculously delicious, as well as being gluten-free and raw!

The star ingredient in this recipe is pistachio, the jade jewel of a nut. In the Bible when Jacob sends his sons to Egypt for grain, he tells them to pack a gift of, “the best products of the land….a little balm, a little honey, some spices and myrrh, some pistachio nuts and almonds.” Surely Christmas treats call for the finest ingredients too. So with Love safely at the top of the List, my second Christmas offering to you are these nuttilicious wonders.

Christmas Love Cookies


Pistachio Nuts, 150g

Coconut flakes, 2 tbsp

Coconut oil, 100g melted

Sweet Freedom/ honey 100g

Sea salt, ½ tsp

REMOVE outer shell of pistachios, to leave gorgeous green kernels.

MIX all ingredients in a large bowl.

LAY a piece of cling film on a clean surface.

SPOON mixture into the centre and roll into a sausage shape

CHILL in fridge overnight.

SLICE into discs and arrange with festive creativity into a tree shape.

SCATTER berries and extra coconut flakes to create something beautiful.
